I've just sign and agreement to buy a motorbike on 2nd May 2023. Now that the latest COE bidding result is out , will i have to pay the previous $12,179 COE or the latest $5,002 May 2023 COE?

That would depend on your agreement with the dealer you bought the motorcycle from. It would be best to check with them
